A little backstory from T…

“Pineapple Upside Down Cake was a classic dessert my family would often eat for celebrations and birthdays growing up. I always loved the brown buttery fruit topping in place of traditional cake icing and the way the sweet molasses brought out the true tang of the pineapple. It still is one of my favorite desserts and we had a blast turning it into a chocolate bar!”

We stone-ground single-origin Peruvian cocoa butter with cane sugar, caramelized whole milk powder, and a touch of nutmeg to mimic a brown sugar yellow cake. Then we topped the bar with dried organic Flathead cherries from Fat Robin Orchard & Farm (Polson, MT), dried organic pineapple, and a touch of our very own roasted cocoa nibs for an irresistible crunch. This is one you’ll want to pine-nibble on for a loooong time.
